Brown Mustard
Description
Rai (scientifically known as Brassica juncea) is the Hindi name for brown mustard seeds. It is a foundational spice in South Asian cuisine, distinct from both the milder yellow mustard popular in Western cooking and the intensely pungent black mustard (Brassica nigra). While Western traditions use mustard seeds mainly to make smooth condiments, South Asian cooking treats whole rai as an essential oil-flavoring agent. Physically, rai seeds are incredibly tiny, round spheres displaying a deep reddish-brown to dark chocolate hue. They are visibly smaller, darker, and significantly more pungent than yellow or white mustard seeds.
